Organic vegetables L’invité
Wednesday.
Kasper, my local organic farmer, brings his weekly products again. Not only for me, but also for 11 local residents. They will collect it from the restaurant later.
Vegetables, fruit, dairy, egg meat; a surprise every week. But always fresh, directly from the land, without margins from the brokering and guaranteed sustainably grown.
I trust my local organic farmer because I know him. I know that sustainability is important to him. I know that the harvest may be disappointing one week and that I get much more the next week.
I know I only get his peppers when they are perfectly ripe and not all year round. That his lettuce does not have the perfect shape and color, but plenty of flavor.
Kasper has a subscription model. His clients assure him of his income every week. This allows him to fully focus on the sustainability of his estate and the quality of his products.
Then I occasionally get a photo on Instagram how he cuddles his pigs, how his chickens scrape in between or which crops he has just grown again.
