“L´invité is a purely Dutch restaurant in the heart of the Jordaan. On our menu lots of Dutch game, sustainable fish from the North Sea and local seasonal vegetables. We also offer beautiful Dutch cheeses and the best Dutch wines. We are proud of our artisan farmers, fishermen, hunters, cheese and winemakers and the beautiful pure products that they make.
When I started with L´invité le Restaurant in 2012, the kitchen was still French, classic French. We have even been nominated twice as the Best French Restaurant in the Netherlands.
But I wanted to cook differently: less sugar, less fat, less salt, just lighter, healthier, tastier and more exciting. And more sustainable, I wanted to know where my products come from.
I was surprised when I noticed that most lamb comes from New Zealand, our lobsters from Canada and our avocados from Mexico. I didn’t want that in my restaurant anymore. I went looking for beautiful products from the region.
Beautiful lamb from Texel, lobsters from the Oosterschelde, fruit from the Betuwe and vegetables from Amsterdam-Noord. Local products produced with respect for nature.
I came into contact with Eurotoques, a club of Chefs who work purely and locally, without powders and jars and other vague aids from manufacturers. That suited me exactly.
I came in contact with The Goodfish Foundation, a club that fights for the use of sustainably caught fish in the hospitality industry. I became the ambassador of Chefs for Good Fish.
I came into contact with New Dutch Cuisine and decided to say goodbye to French cuisine. We have a modern Dutch kitchen, with a French name.“
