Dutch game
As a local sustainable Dutch restaurant we serve Dutch wildlife game, meat; the natural richness of Dutch nature. These animals have never been locked up and have always been able to scratch their own food. This gives the meat more complexity and flavor richness.
In our Dutch Cuisine Tasting Menu we will introduce you to the rich flavors of wild goose and fallow deer from the Amsterdam watersupply dunes.
Sustainable fish
As ambassador of Chef’s for Good Fish, L’invité only opts for sustainable fish on the menu. We check for sustainable fishing methods, the best season for the fish and we opt for local fish from the North Sea. We like to work with local food, like super fresh raw mackerel from the North Sea, oysters and razors from Zeeland.
For our catch of the day we always make a sustainable choice. This could be a haddock or hake, sometimes a tongue or dab.
Local vegetables
We love to surprise you with a nice selection from the Dutch biodiversity of vegetables of the season. This encourages farmers and growers to grow more varied. By choosing the right seasons, fewer greenhouses are needed and you can taste more natural richness of Dutch soil. In our Dutch Cuisine tastings we always present the best vegetables of the season. Often these are also less well-known and forgotten Dutch vegetables such as the Soester tuber, purple carrot or primrose. Special Dutch tastes that deserve to be tasted with special attention.
